Treehouse Tried and Tested

We have been aware for some time that some of you have been viewing our blog and salivating; some parents have had to tolerate entreaties from their children to cook at home something they enjoyed at lunchtime; whilst friends of ours have had to withstand our constant barrage of praise regarding our lunchtime feasts!
All of which has led us to bow to pressure and share some of these recipes with you…so from time to time we will add a recipe, or link to a recipe for you to try for yourselves….

Coconut Dream

(adapted from Coconut Fish Dream by Vicki Bhogal. Cooking Like Mummyji)

Serves 4-6
Sauce:
1 tablespoon oil
3 tablespoon butter
1 teaspoon cumin seeds
1 onion, grated
1 can chopped tomatoes
1 teaspoon salt
3 green chillis, chopped (optional)
1/2 teaspoon chilli powder
1/2 teaspoon turmeric
1/2 teaspoon garam masala
1 can coconut milk

Handful fresh coriander, chopped

A selection of roasted, steamed vegetables eg squash, sweet potatoes, cauliflower, mushrooms, spinach, peppers, aubergine, chickpeas etc…, (Or, 450g skinless white fish, cut into chunks)

Method:
Melt oil and butter, add cumin seeds and when sizzling add onion. Sauté until golden.

Turn down the heat, add chilli, turmeric, chilli powder, tomatoes. Stir.

When the oil separates, add garam masala and coconut cream. Cook 2-3 mins.

Add cooked veg, stir and cook gently to heat through. (Or, add fish and cook gently for around 12 mins) Add coriander before serving.

A real understanding of sustainability, nature and environmental awareness is developed.
